I freaked out a little the other day when I was handed a red Starbucks cup. Not long after my freak out I had customers at the farmers market already asking about Christmas gift ideas. Eeep! I think I’m a little freaked out not because the holiday season is here, but because I want to know where the rest of the year went.
I decided to do what any normal person does when freaked out and make plans for a pie. The pie sort of turned into a crumble because I didn’t really have it in me to make a pie crust. These crumbles ended up reminding me of my grandmother’s Dutch apple pie, except without the bottom layer of crust. I added a little extra punch of flavor with some fresh, piney rosemary. And, because apple pie and ice cream are what autumn dreams are made of, I enjoyed the crumbles with a couple of scoops of vegan vanilla ice cream.
