So I totally had all these plans for this year’s cookie month. I furiously made list upon list so that I would be prepared with a wealth of ideas and inspiration. Then, as is the theme of this year, life happened. I had to unexpectedly go out of town for work, attend a couple of different Christmas parties, and try to package eleventy-billion bags of granola.
Luckily, I had to foresight to get this post photographed before the chaos ensued. To ease the effects of the hustle and bustle most likely going on in all of our lives right now, these cookies are pretty simple and straightforward. I filled them with apple butter, but you can fill them with whatever jam or preserve you have available. Or, if you want to be more indulgent, bake them without a filling, then fill with nutella, ganache, or salted caramel once they’ve cooled.
