Youโre probably wondering how I can follow an autumn and pumpkin inspired post with some summery peaches and raspberries. ย Yeah, me too. ย Our local peach season (sadly) ended a couple of weeks ago, but we still have some late summer peaches out of Austin trickling into our market.
I was going to be ambitious and make some sort of peach and raspberry pancakes for my lazy Sunday breakfast. ย I was feeling inspired because it was pleasant enough to have my windows open. ย But, to tell you the truth, I got a little too lazy for lazy Sunday and went a different route than pancakes. ย I love raw almond butter, and since peaches and almond butter work really well together, I decided to combine them in a breakfast panini. ย Since I had a few raspberry stragglers in my fridge, I decided to throw them in the mix, too.
The resulting panini is pretty amazing. ย Itโs almost like an homage to the peanut butter and jelly sandwich but in a grown-up panini form. ย After I finished eating it, I had to exercise a bit of restraint not to immediately go and make another one. ย You can probably tell by the photos that itโs a bit messy (and a little un-photogenic), but itโs totally worth it.
Almond Butter, Peach, & Raspberry Panini
notes: Iโve been using the Food For Lifeย brand gluten free/vegan bread lately so that is what I used for the panini. ย Feel free to use whatever you like. ย The recipe is written for one panini, so multiply it as you need to. ย I donโt have a panini press, so I used my grill pan. ย
ย
2 slices of gluten free/vegan bread
1-2 tbsp raw almond butter
1/2 a peach, thinly sliced
small handful of raspberries
1/2 tsp pure maple syrup or honey
coconut oil as needed
Heat up your grill pan or panini press. ย Spread each slice of bread with almond butter. ย On one of the slices of bread, layer on a few thin peach slices. ย In a small bowl, combine the raspberries and maple syrup and mash them together. ย Put the raspberry mixture on top of the peaches, then place the other slice of bread on top. ย If you are using a panini maker, follow the included instructions. ย If you are using a grill pan or skillet, lightly spray with coconut oil then place the sandwich in the pan. ย Grill/toast on each side until a toasty golden brown. ย Eat immediately and enjoy!
